Also, to answer your question about my tilapia – I’ve made it many different ways (I love baked fish, and my children think it’s chicken – hey if they’ll eat it…haha) but our favorite is brushed with olive oil and covered with Shake n Bake and salt and pepper. I also mix in a little Montreal steak seasoning in mine because I like it a little more spicy. I’ve also tried covering with crushed croutons, plain bread crumbs, or just baking it seasoned with lemon pepper. My family seems to enjoy tilapia any way I cook it – the only thing my son has asked me is “it’s not hot is it?” (Once I made the mistake of adding spicy seasonings to all of the fish, not just mine and he has never forgotten.) There is a restaurant here in town that has the best cajun baked tilapia. I’d love to find (or get close to) the recipe that they use!! Maybe if I keep experimenting, one day I’ll get it – Ha!
