two cloves garlic, smashed and chopped

Pinch crushed red pepper

one/two pound ground beef

one/2 pound ground veal

one/2 pound ground pork

one cup grated Parmigiano

one/four cup finely chopped fresh Italian parsley leaves

one cup breadcrumbs

Marinara Sauce, recipe follows

one/four cup further-virgin olive oil

1/four pound diced pancetta

two massive Spanish onions, lower into one/4-inch dice

four huge garlic cloves, smashed and chopped

4 (28-ounce) cans Italian plum San Marzano tomatoes
